Captains Log Day 63

It has been a loooooong time since my last blog post, but it’s really hard to write when I’m not inspired. Every day pretty much runs into the next – wake up, school work, lunch, isolated bike ride or walk, dinner, another isolated bike ride or walk, bedtime. The end. Wake up the next day and do it all over again. Even weekends are basically like “what can we do today that doesn’t involve going anywhere or being around anyone.” So, I’m sorry for the lack of posts, but you wouldn’t have wanted to read about our boring quarantine life. My main goal when starting this blog was to share about the new parks, hikes, restaurants, hidden-gems, etc. that my family finds. Since that’s not happening, I didn’t really know what to blog about….until I came across this gem of a recipe included at the bottom of the post 🙂

The kids started off really strong with school work, but we have gotten more relaxed as time went on and the announcement was made that schools are not re-opening until the fall (hopefully the fall!!). Eli is already ahead with math and reading and I don’t want him to be really bored come first grade in the fall, so it’s a struggle to keep him engaged in school work without continuing to move him further ahead. Ava’s teacher started doing live zoom classes every day, which is above and beyond what I expected from preschool. However, she gets super shy and never wants to actually be part of the live class, so we end up watching the recorded video on Facebook later. Thankfully, Ava is FINISHED with preschool today!!!! And Eli only has 4 more days. We got this!

Okay, now to the reason for this blog post. Guarantee it’s more exciting than the last 2 paragraphs you just read 🙂 I have the most delicious egg-less cookie dough recipe to share! I’ve tried ones in the past that were heavy on the sugar, so they were grainy; some were too heavy on flour and they had no flavor; and some were just meh. But this one has the perfect ratio of ingredients and is by far the best cookie dough we’ve tried! Sometimes you just want the dough and not the cookie, so here ya go. Mix this up, grab a spoon, and enjoy a little quarantine goodness 🙂 This was the most exciting part of my day yesterday. Haha!!

A scoop of cookie dough that’s egg-free and ready to eat!

Egg-Less Cookie Dough

  • 1/2 cup butter, softened
  • 1/2 cup packed brown sugar
  • 1/4 cup white sugar
  • 3 Tablespoons milk
  • 1/2 teaspoon vanilla extract
  • 1 1/3 cups flour
  • 3/4 cup chocolate chips (mini or regular size)
  1. Cream butter, sugars, milk, and vanilla together until smooth.
  2. Add flour. Mix until well combined. Stir in chocolate chips.
